Breakfast sausages!!

Next Sunday i will be making some sausages, this sausage is a lightly spiced breakfast which can be made with either pork or beef.

Seasoning




  • 5 teaspoon ground white pepper

  • 2 1/2 teaspoon mace

  • 2 1/4 teaspoon salt

  • 2 teaspoon ground ginger

  • 2 teaspoon rubbed sage

  • 1/2 teaspoon nutmeg


Sausage




  • 2 1/2 lb. boneless lean minced pork (beef) 70/30 meat to fat content.


  • 1 1/2 cup dry bread crumbs

  • 1 1/4 cup chicken broth

  • 3 1/2 teaspoon sausage seasoning



Mix the meat with seasoning and leave over night in the fridge for extra flavour.
* I already have an order for 10 kilo's, if anyone is interest in some please PM how many you want. A kilo of pork/beef is 200 baht and that will be on average 15 - 17 sausages per kilo. I won't do 1/2 kilo's.
